When clicking on the one lip cookie sheet the top does not appear to be smooth like the one you are using in the video.

how or what do u use glucose and glycerin for?

Sweet Wise Response -

Glycerin can be stirred into dried out icing color to restore consistency. It can be added to icing (frosting) to prevent it setting too hard. Also, it can be used as a sugar substitute and as an additive to products when you want to hold moisture.

Glucose is a common ingredient in cooked sugar used for hard candy or for pulled or blow sugar decorations. Glucose also adds really nice elasticity to royal icing which is especially useful when doing string work with royal icing.

what kind of whipping cream

Sweet Wise Response - This was real whipped cream made from Heavy Cream w/ a little piping gel added to prevent the whipped cream from separating.
