Did you use tempered chocolate or just melted couverture?

Sweet Wise Response: We used Sweet Wise Melting Wafers. It's a non-tempering chocolate (compound chocolate, not couverture).

The cake looks great when its done, but would the chocolate start cracking off when you tried to cut the cake?

Sweet Wise response: When cutting, use a very hot knife (I keep a pitcher of hot water as I'm cutting, and it works very well.).
