Jenny, our very talented instructor in the Sweet Wise Memphis location, shares a project she made for her daughter. Make easy details for this ocean-themed cake with fun detail by using gumpaste in these sea creature themed chocolate molds!
***A tip from Jenny: Rub a little shortening in the molds before pressing the gumpaste in. Put the molds in the freezer for about 5 minutes to help the gumpaste harden, and they should so they pop right out!
The fish and coral: Nemo is made of Rice Krispie treats and molded by hand. She covered it in melted white chocolate to make the surface smoother. She then added a thin layer of buttercream for the fondant to lay on. The tail and fins are gumpaste.
For the coral, she used fondant and tylose (http://sweetwise.com/tylosepowder.html) to create gumpaste and rolled out just a random shape to fit on the top cake tier. She then used various sized piping tips to cut random holes in the coral. She draped it over random cylindrical items (dusted with powdered sugar) to create different-sized waves. Once fully dried, she added this adorable coral to the cake!
