I always struggled with cutting or tearing fondant off a large block (or even a small block if it was hard). Cutting it caused it to stick to my knife and cause a mess and tearing it wore out my hands before I ever even got to the kneading process. This knife goes through fondant and gumpaste like butter leaving absolutely no residue left. The knife comes out as cleanly as it went in. I love this knife and don't know how I lived my cake life without it. I've had this knife for about 3 years now and it's a Godsend!!!
