Royal Icing Calligraphy, Basic Royal icing Lettering and Royal Wedding Cake Techniques
In this class you will spend the morning learning how to produce calligraphy piping using royal icing. Jay taught himself this technique when he was asked to collaborate with Martha Stewart Weddings 15th Anniversary edition. He fell in love with the technique and uses often as it is an effect that today’s brides request repeatedly. The possibilities for using this technique are truly limitless! The beauty of the pieces come from a special technique that can be made in advance and then appliquéd to the cake layers thoughtfully and methodically. The afternoon will be spent learning the best of the best from the incredibly popular “Royal Wedding Cakes” class, including very detailed string work, drop strings, scroll work, oriental string work, royal pearls and Jay’s signature Triple Beaded Border. If you want to strengthen your piping skills, this is the class you need to take. Each student will receive a Certificate of Completion signed by Jay at the end of class. Feel free to bring a lunch or plan to have lunch nearby on your own.

(2) 12” round cake circles (we will cover these boards)
9” Hexagon Dummy (4” tall)
10” Round Dummy (4” tall)
5# Pink Fondant (Satin Ice, Elite, or FondX)

2 #12 disposable piping bag
Small container of shortening
Small container of water with a lid ( you can fill it there :))
Piping gel - small container
Rolling pin (large please)-SweetWise has pins you may borrow unless you have one you love
