1/2 cup sugar
1 cup (2 sticks) butter
1/2 Tbsp Vanilla extract
1 tsp grated lemon zest
pinch salt
1 large egg
2 1/4 all purpose flour

Cream sugar and butter in bowl of stand mixer with paddle attachment until smooth.
Add vanilla, lemon zest, and salt. Combine.
Add egg, combine. Scrape down sides of bowl and combine thoroughly.
Add flour and mix just until the flour is incorporated- don't over mix.
Turn dough out and flatten into a disk. Wrap in plastic wrap and refrigerate at least an hour.
