4 c. Granulated Sugar
3 1/2 c. All Purpose Flour
3/4 c. Cocoa Powder
3/4 c. Dark Cocoa powder
1 Tbsp baking powder
1 Tbsp baking soda
2 tsp salt
4 eggs (at room temp)
2 c. whole milk (warmed)
1 c. vegetable oil
1 1/2 Tbsp Pure Vanilla Extract
2 c. boiling water
Sift dry ingredients together in bowl of a stand mixer. Add milk, eggs, oil, and vanilla,
mix on low speed until combined. Scrape down sides, mix on medium speed for one
minute. Place mixer on lowest speed and slowly drizzle in boiling water a little at a time.
Stop and scrape down sides a couple of times before all water is added. This batter will
be VERY thin. Don’t let that throw you off! Pour batter into desired sized pans and bake
at 350 degrees F until a toothpick comes out clean from the center (times will vary
according to the size pan you use).
Makes 10 1/2 cups batter.
